Most of us are attracted to aesthetically beautiful things and food is no exception.  So, by making nutritious food look appealing and exciting it becomes more tempting and desirable.  If it tastes as delicious as it looks then it will be more enjoyable to eat.

Agnolotti with salsa rossa, goats cheese & spinach.


Ingredients (serves 4)

2 x 375g pkts fresh spinach and ricotta agnolotti
1 x 430g btl roasted capsicum, drained
1 x 425g can Woolworths Select diced tomatoes
1 tbs olive oil
2 garlic cloves, crushed
2 large sprigs fresh rosemary
125ml (1/2 cup) white wine
1 1/2 cups baby spinach leaves130g goats cheese, crumble.


Sweet corn and bean enchiladas.


Ingredients (serves 4)

12 enchilada tortillas
 1 tablespoon olive oil
 1 small red onion, chopped
 1 red capsicum, diced
 1 zucchini, grated
 1 teaspoon chilli powder
 1 large tomato, diced
 310g can corn kernels, drained
 400g can red kidney beans, rinsed, drained
 200g jar taco sauce
 3/4 cup grated tasty cheese


Avocado, feta and roasted tomato salad.


Ingredients (serves 6)

1kg roma tomatoes, roughly chopped
  6 garlic cloves, peeled, thinly sliced lengthways
  3 1/2 tablespoons extra-virgin olive oil
  375g small green beans, trimmed
  1/3 cup ligurian olives (see note)
  2 avocados,halved,stonesremoved,peeled,
  100g marinated feta cheese, crumbled
  1/2 cup tightly-packed small basil leaves


Andalusian gazpacho.


Ingredients (serves 6)

375g day-old rustic-style bread
 1.75kg ripe tomatoes
 2 Lebanese cucumbers, peeled, halved, seeded
 1 red capsicum, halved, seeded
 1 Spanish onion, halved
 1 clove garlic
 140ml extra virgin olive oil, plus extra, to serve
 1,tablespoon sherry/white vinegar 2, inner celery stalks with leaves attached.
